Baskin Robbins 31¢ Scoop Night

On Wednesday April 29 from 5PM to 10PM, participating Baskin Robbins locations are offering small ice cream scoops for 31¢ in honor of America’s firefighters.  Baskin Robbins will be making a $100,000 donation to the National Volunteer Fire Council National Junior Firefighter Program, and at some locations you will have the opportunity to make a donation to a local fire prevention charity.

What I’m Cooking This Week

Harris Teeter has a sale on EZ Peel Shrimp this week ($5.99/lb), so I decided to try this Shrimp and Grits Casserole (my husband’s favorite) from Cooking Light.  I thought it turned out well.  I served it with Frank’s Hot Sauce (33¢ at Harris Teeter), which added a nice kick.  I would definitely make it again.

Shrimp and Grits Casserole

Ingredients:

2 cups 2% reduced-fat milk
3/4 cup chicken broth
1 cup uncooked quick-cooking grits
1/4 teaspoon salt
1/2 (2 oz) shredded Parmesan cheese
2 tablespoons butter
1 (3 oz) package 1/3-less-fat cream cheese
3 T chopped fresh flat-leaf parsley
1 teaspoon dried chives
1 T lemon juice
2 large egg whites
1 lb pealed and deveined medium shrimp, coarsely chopped

Preparation:

Preheat oven to 375.

Combine milk and broth in a medium heavy saucepan; bring to a boil.  Gradually add grits and salt to pan, stirring constantly with a whisk.  Cook 5 minutes or until thick, stirring constantly.  Remove from heat.  Stir in Parmesan, butter, and cream cheese.  Stir in parsley and next 4 ingredients (through shrimp).  Spoon mixture into a 11 x 7 inch baking dish coated with cooking spray.  Bake at 375 for 25 minutes or until set.

Free Stuff To Do This Weekend 4/24-4/26

Georgetown’s French Market—Head to Georgetown’s Book Hill (on Wisconsin Ave., between Reservoir Rd. and P St.) Friday and Saturday (April 24-25) for an open air French Market.  Over 30 participating stores will offer shoppers up to 70% off designer goods, art, and antique home furnishings.  There will also be food, music, and giveaways.

National Children’s Museum Launch Day—Due to open in 2013, the National Children’s Museum is opening a “Launch Zone” with prototype exhibits at the National Harbor this weekend.  The opening goes from 11AM to 4PM Saturday and Sunday and will feature art activities, face painting, and performances.

Sunday Jazz—On Sunday afternoon, the organizers of Jazz Night in Southwest will present Thinking About Jazz: An Intergenerational Jazz Experience.  The program is family-oriented and intended to introduce young people to the jazz tradition.  It goes from 1PM to 3PM with refreshments and door prizes.

Shoppers Double/Triple Coupons 4/23-4/29

Today through next Wednesday April 29, several Shoppers Food Warehouse locations (sadly, not my local one) are tripling all coupons up to $.50 and doubling all coupons up to $1, inclusive.  So $.50 coupons are worth $1.50 and $1 coupons are worth $2 with no restrictions or limitations!  Participating locations include Burke, Chantilly, Manassas, Sterling, Herndon, Leesburg, Gainesville, and Centreville.

And an aside: rumor has it that Harris Teeter will be tripling coupons again soon, possibly next week.

Lost Your Job? Get a Free Franklin Covey Planner

Franklin Covey is giving away another round of free planners!  If you’ve recently lost your job, stop by a Franklin Covey store on Friday April 24 or Saturday April 25 and you can receive a free 2009 Franklin Planner.  You will need to provide the name of your most recent employer and supervisor and the date that you were laid off.  Apparently it doesn’t matter when you lost your job—just that you were recently laid off and are looking for work.

Tyson’s Corner Center has the only Franklin Covey store in Northern Virginia.  For other locations, check here.

If you don’t live near a store, you can call the Call Center on Friday between 7AM and 6PM and they will send you a planner for only the cost of shipping.  More details and the number to call here.
